I’ve learned that if I find a recipe that I like, I should blog about it. If I post it, I know where to find it next time I want to use it. Anyways, it was my girl’s birthday… big 20! YIKES, that makes me officially old. So I decided to make her a pizookie instead of a cake. Here is what I made….
2 1/4 cup flour
1 tsp baking soda
1tsp salt
3/4 cup packed brown sugar
1 package of instant vanilla pudding: small package (3.4 oz) ( I used Coconut Cream Pudding!)
1 cup (two sticks) of butter room temp*
1 tsp. vanilla extract
2 large eggs
1 package of chocolate chips.
preheat oven to 350 degrees.
*if you don't plan ahead ( like me) and don't have your butter at room temp, you can always put your butter in the microwave for a few seconds till it's super mushy.
in a large bowl place your butter, baking soda, salt, brown sugar, vanilla pudding, extract, and eggs.
Mix till creamy.
Gradually add flour.
Keep mixing till all flour is in. add choc chips.
Mush (nice English...ha) in a big pan.
Bake for 15 minutes (keep checking, all ovens bake differently). Do not over bake.
Reheat 10 min before you want to serve so it is nice and warm, serve with ice-cream
Which leads me to the ice cream story....
I went to pick up some at the store. I noticed that all the ice cream containers have become quite small.... and I found a original 1/2 gallon. I laughed when I read what was written on the seal (read for yourself). Really??? It should be the other way around... on NEW containers "new smaller size!"
